Our Food
Trigony is an indulgent treat and offers you a combination of wonderfully relaxed atmosphere, excellent rustic cuisine and friendly local staff. We source the very finest local ingredients, and we proudly support the Dumfries and Galloway farming community who provide us with many of our ingredients. Milk and dairy produce comes from a local organic dairy round the corner. Our Butcher supplies us with award winning black pudding and the best local lowland Galloway beef & locally sourced lamb. Our Haggis comes from the award winning Cockburns of Dingwall on The Black Isle in Invernesshire with traditional Ayrshire cured bacon and sausages selected from Ramsey’s of Carluke in the Borders. We also support the thriving local Solway Coast fishing community and regularly purchase fresh Solway Scallops and sea bass, weather permitting. Our Organic Salmon comes from Shetland, which although farmed has a delicious taste and wonderful texture unlike shop bought farmed salmon.
We grow our own fruit, herbs and vegetables for many of our dishes, the produce comes from our small walled garden. All our vegetarian dishes use our own ingredients, you can’t get fresher!
This gives all our guests a wonderful choice of local food, with a few selectively sourced “special” ingredients like the free range rare breed “Label Anglais” Chickens imported from England weekly, a truly organic reared chicken that takes almost twice as long to mature as the average organic chicken!
We also cater for all tastes and diets from vegetarian and vegan to gluten and dairy free, just notify us before you arrive and we will prepare delightful dishes to suit your dietary requirements. If you would like to know more about our food you can visit our recipe blog.

From the rolling southern uplands to the dramatic cliff-top paths of the Solway coast- It’s also quite literally the perfect spot for a relaxed romantic Scottish break.
Things to do
We can also arrange many activities which make exploring this hidden corner of Scotland such a great pleasure, from spending time in our Garden Spa to hiking up the hills, however you wish to spend your time and your energy levels we have an activity to suit.
There are a variety of activities to enjoy from the adventure of a falconry experience in the hotel grounds and the surrounding countryside to horse riding through the Nithsdale valley, or perhaps a Land Rover safari or a mountain bike trip into the southern uplands.
The river Nith is only moments away and salmon and Loch fishing are both available locally. We also offer a hotel gift voucher for all these activities as they really do make the perfect and unique gift.
Classic car hire is a great way to explore the quiet roads, but so is just taking a gentle stroll from the hotel gardens into the surrounding countryside or even doing a spot of shopping in the friendly boutiques of our local estate village of Thornhill.
Whatever you choose to do you’ll find that we are a dog-friendly hotel, and that’s all about having a special and relaxing country house holiday in this hidden corner of Scotland.
Wireless Internet access is available in most of our rooms, including the all important bar.

The Herald – Newspaper Review
“From the outside the Country House Hotel has much in its favour. The walls around the front door of this small Edwardian country house hotel are covered in a thick coat of ivy.
Above, an inscription is carved in the red sandstone, it is in large capital letters and offers some optimism: “The Lord bless thy going out and coming in”, it announces. Underfoot, there is just the right depth of crunchy gravel to give the correct impression at this luxury hotel Scotland.
It’s what picture postcards are made. One of its previous occupants was so impressed with the house that she stayed there for more than 100 years. She was Frances Shakerley, Scotland’s oldest lady, who lived to be 107.
But that was a long time ago. Today the house is a country house hotel Scotland in the care of Jan and Adam Moore, a husband and wife team, who took over this pet friendly hotel 8 years ago.
Inside, there is no shortage of ornate features, just what you might expect to find in a fine country hotel Scotland. The entrance hall is dressed from head to foot in Japanese oak paneling which follows on up the staircase where a large art deco window lights up the whole area.”
A Word from Adam Moore, Proprietor
“When we took ownership of Trigony, our aim was to make this the best Scottish Hotel, it was totally refurbished just before the war when there was still a fair number of craftsmen about and simple, stylish and tasteful touches enhance the dining room and public rooms, but best of all is their outlook, which through an extensive pattern of windows, peer on to the garden & grounds.
“Directly above, the bedrooms look further out on to the fine countryside of this often neglected part of Dumfries and Galloway. For the visitor, there are enough brochures and catalogues about the area’s attractions to fill an old seadog’s chest. This is clearly not a country hotel that is in the mould of the corporate treadmill, but one that rests easily with peace, quiet and interestingly good food. It is also a dog & pet friendly hotel.”
Menus Reviewed
“While abroad, perhaps marinating in the South of France, the Moores have not escaped without acquiring some recipes. Consequently the menu often reflects footprints of their journeys.
“There is a strong influence towards natural food of the Elizabeth David school. Simple European peasant dishes, and authentic Spanish and French dishes take their place beside steak and kidney pudding or roast rack of Dunscore lamb.
“There is a leaning towards the organic grower. But more important, the grower that is not an intensive producer. Adam Moore is quite earnest about acquiring quality produce that is full of taste and he only deals with the small-scale organic farmer.
“But like the custodians of all country hotels in Scotland, he can hardly go wrong with traditional dishes, having the best Galloway beef, venison and game right on his doorstep. And of course fish from the Solway which is but a 40-minute drive.
Note: Unlike many Country House Hotels, this country house hotel in Scotland is a pet friendly hotel.”
